Most materials are faced with a stark choice between either low energy or high entropy. They choose the former (crystal) at low temperatures and the latter (liquid) at high temperatures. But there is a large and expanding group of materials that can have it both ways: relatively low energy and relatively high entropy at the same time. Such intermediate phases can be classified broadly as liquid crystals, or mesophases. When heated these materials do not give up all their order in one step but retain some of it and melt in two or more steps. The mesophases can have simple or complex, sometimes mind-boggling structures, showing great “ingenuity” of the molecules in reaching the optimal energy-entropy compromise. Many provide pleasure to the eye and challenge to the mind, as well as profit for their producers and users. Selected examples will be shown.
